1) Stan - my audio is 4608kbps .WAV bitrate before it goes into Premiere Pro.
Once it is ready for exporting, I use the standard audio settings for MPEG2-DVD, which are PCM 16-bit stereo 48Khz.
I don't have any menus at all. The video footage plays once loaded into the player.
2) SAFEHARBOR - Thank you for that info. My video is just over an hour so I'm kind of borderline on a long or short video. But even using CBR at 8, the video size is estimated at 4.76GB in Pro, and with this 200MB that Encore seems to add, I would probably be above the maximum size allowed for one layered discs. Here is the screenshot on CBR 8:

As you can see, the estimated file size is 3512MB, well below what I need but I was being safe.
Please note, the video and audio files exported ended up using 3.623GB as displayed in their folder once exported with AME.
Next, Encore's analysis:
As you can see, the file size has jumped almost 200MB to 3.81GB. Only 526KB is used for ROM content, so I have no idea where the 200MB is coming from.
